Because acrylic paint isn't resoluble - there are interactive brands, which I don't use: whether they can be brought back to life if they harden in the tubes I don't know: it wouldn't recommend the paint to me if they could, because it would mean that acrylic paintings in interactive form would have to be handled as delicately as watercolours or gouache, preferably under glass. Acrylic is a plastic polymer - you can no more re-wet most versions of it than you could revive dried Araldite.
Hence the need to ensure the nozzles of tubes are kept clean and caps replaced, because air getting to the paint will dry it hard.
