I don't know either, but that's never stopped me expressing an opinion ... Maybe gallery wrapped is canvas put together in a specific gallery as opposed to the store-bought generality of canvases which are made in bulk by the big manufacturers? So you could expect it to be of rather better quality, and correspondingly expensive. I think I should be inclined to take my courage in both hands and actually ask them, myself...
Gallery Wrapped Canvas...? Another name for a Deep-Edged Canvas...say 35mm or more. Think of a painted canvas, wrapped around a deep-edged stretcher frame, hung unframed in a gallery... Gallery Wrapped Canvas...an American description I believe... I found this phrase and adopted it into my website. OR the canvas it attached by say staples to the back of the stretcher...say the standard 18mm.

In my little Saturday art shop there are two types of box canvas...one with a narrow edge and the material the canvas is also a bit see through and some of the staples can be seen so much cheaper... the other much more expensive deep edged staples unseen and much better quality material...I had some cheap ones and the other night I covered one in a couple of coats of gesso and I decided not to use it...wasn't a good look. It's always worth looking for a good sale and perhaps get yourself on an emailing list for what is going to be on sale...that's how I buy my canvasses usually at 50% off they can be stored...I bought two today for a project for my Daughter...the deal was if you spend $15aud you get 50% off as many canvasses as you want to buy...because artist quality watercolours were on sale all grades at the same price $6.95aud...I spent quite a bit but I intended to...I got a lot for my money...if I didn't shop this way I wouldn't be able to afford the good stuff...so for me there is a difference...I think you get what you pay for
I've always been under the impression that gallery wrapped meant back stapled with neat corners, enabling the edges to be painted and hung without framing.
I've got a couple of older oil paintings that don't quite meet my standards, and I'm thinking about adding oil pastels over the top. Well, actually, I made a start on one of them. Managed to correct some lines on that one. But I'm thinking of something more radical on others. They're all knife paintings, so there's the challenge of the impasto passages (I pared a few of those down on the one I've already tackled). Has anybody tried oil pastel over oil (impasto or otherwise), and - assuming the results are worth the trouble - might varnish intended for oils work to finish it?
